An easy way to process Cornus mas fruits is to dry them in a food dehydrator, pit and all. When you eat them you do need to remove the pit as part of the eating process, like eating pitted prunes. The drying removes the astringency that make the fresh fruits challenging to eat, all that is left is an amazing flavor experience, no sugar needed.
